Sep 7th 2010 10:01AM I can't speak to the organic side, but I worked on one of those "big" and "scary" regular farms that people have been growing things on for the last century, for a while.... Anyway, we weren't one of those super huge places, around 1000 acres or so. To make ends meet, the owner and I were the only two people that worked there. Between the two of us, we would plant everything, tend to it, work the fields, etc. The only time we had help was when it was harvest time and then his wife would come out to help drive a truck and he would bring on another guy for the other truck. I can't even imagine what he would have had to do to convert to an organic shop. I don't even know where he would be able to sale his stuff in our area, he would have probably had to spend even more trucking it vast distances. Nutrition aside, I think there is a vast misunderstanding between people that have never been involved in the business and have only gained their knowledge reading articles or watching food nation/king corn, etc. The cost of growing a GMO product, applying pesticides, and herbicides is much less than doing something strictly organic. Just the amount of water that would be involved in a traditional product would be enough to question growing it in the area we were in (less than 14 inches of rain per year, rapidly dwindling ground water supplies, etc).

Jan 27th 2010 9:13AM Milk please! Actually, half and half or heavy whipping cream. I really dig on some condensed milk too, but that really needs a strong cup like I can get at a Vietnamese place down the road. If I am making some at home, I will first (usually anyway) try a little bit w/o any type of dairy, but I've been drinking it with cream/milk and sugar since I was 3 or 4 (my grandpa drank three things, for the most part, milk, coffee, and root beer so I was an early adopter).
Anyway, I just wanted to say that I have really enjoyed all the coffee posts you have put up over the past several months.
Jan 12th 2010 3:59PM As a long time churro eater, I had never had them with the thick, hot chocolate mixture until I went to Spain. That being said, it was almost the best food on the entire trip. We had them about 11 at night, as Madrid really gets started about that time (we were getting ready to head in as all the locals were heading out).
Jan 12th 2010 3:55PM I have no doubt that you are 100% correct about many of the coffee chemicals they had doing nothing more than imparting a smell as I have had some like that. I, sometimes, like them for just that reason. I feel that I still get, assuming it was a quality coffee to begin with, the nice coffee flavor I am looking for w/o being over powered by the flavor I tend to get with even a high quality flavored syrup. I suppose I could just put the ever so slightest dash of the syrup into the cup, but then I miss that smell. It is a bit of a conundrum. There is a local shop here that flavors their own beans and, while I can't say that I know for certain they stay away from unnatural substances (for a few of their flavors, I can't imagine they do), I do know that they always start out with quality beans. It makes a huge difference. I've always disliked coffee that was flavored while roasting, until I had the stuff they make, even if the chocolate creme brulee has a smidge of unnatural chems (it is such a rare time that I get it, but I think if I had it every day, it would be a no go). I like to think that their hazelnut comes from roasting hazelnuts with the beans and the vanilla is from adding vanilla beans to the roast, but I am always forgetting to speak to the owner about it.
Oct 15th 2009 4:42PM We do the same thing at our MS State Fair. Seems like the quality of fair food has gone down in the last couple of years, but it is still very nice to be able to run in (for free) and grab some food.

The end of the story states that most places east of the MS river don't require cattle brands or ear tags. Being from TX and now living in MS, I can attest to that fact. Back home, I lived in a farming/ranching area and all cattle were branded and most had ear tags. Around here, when I am traveling the countryside, I don't see hardly any that way. Of course, back in TX, there were more cattle on just one buddy's farm than I typically see in 150 miles of travel here. I suspect, without reading the whole story, is that they are not going to auction houses. They are probably selling straight to a butcher, but, more likely (just guessing) is that they are selling what could be a 500 dollar calf to someone else for
Aug 5th 2009 11:42AM I think you hit the nail on the head when you say that each individual varies. One of the best cross country runners we had at our school would generally party hard the night before, have a smoke or two before he ran and another few when he was done. Didn't seem to bother him at all.
